Summer is still in full swing!\u00a0 That means lots of yummy summer BBQs! While BBQ may mean hot dogs and hamburgers to some, it’s easy to use vegetarian recipes and still get the taste of summer. Mmmm. Using vegetarian recipes not only gets you moving towards a healthier lifestyle, but it’s also eco-friendly! So what’s stopping you from moving<\/a> towards a summer dinner full of vegetarian recipes? Nothing, that’s what! Hit up the farmers’ market, fire up the grill, and check out some of my favorite summer vegetarian recipes:<\/p>\n

Vegetarian Recipes: Fruit Spritzers<\/h3>\n

It’s important to stay hydrated during the summer! These fast vegetarian recipes for summer fruit spritzers<\/a> will make your taste buds happy and keep you refreshed. Ahhhh. These drinks are also much healthier than sugary sodas that might actually lead to dehydration.<\/p>\n

Vegetarian Recipes: Charred Corn Tacos<\/h3>\n

I love to put just about any vegetable straight on the grill. Corn is my favorite to char. So delicious! These charred corn tacos<\/a> are easy and quick, allowing you to cook while playing bocce ball at the same time. (Because that’s what a BBQ is all about, right?)<\/p>\n

Vegetarian Recipes: Chopped Salad with Feta, Lime, and Mint<\/h3>\n

So you can’t exactly barbeque vegetarian recipes for salad, but this refreshing chopped salad<\/a> is a nice addition to the mix that ties in really nicely with the corn tacos and veggie burgers. It’s also simple and easy to make. Saving time in the kitchen translates to more time in the pool. Who doesn’t love that?<\/p>\n

Vegetarian Recipes: Veggie Burgers<\/h3>\n

Most veggie burgers can be mushy and blah. The keys to good vegetarian recipes for burgers are fabulous ingredients and toppings! This vegetarian recipes for veggie burgers<\/a> keeps it interesting with a good texture from quality ingredients. Try making your own BBQ sauce<\/a> (be sure to use vegetarian Worcestershire sauce<\/a>!) and a quick and easy slaw<\/a>.<\/p>\n

Vegetarian Recipes: Foil-Pack Mushrooms<\/h3>\n

Little clouds of heaven! That’s what these easy BBQ stuffed mushrooms<\/a> should be called. This is one of many good vegetarian recipes, but make it even better by adding some fresh herbs from the backyard garden<\/a>, marinated artichoke hearts, spicy quinoa, or a splash of your favorite pasta sauce.<\/p>\n

Vegetarian Recipes: Cinnamon-Grilled Peaches<\/h3>\n

This is one of my favorite vegetarian recipes. What says summer more than peaches and ice cream<\/a>? And it’s so easy and quick! Just pop the peaches on the grill and they become even sweeter. While this dessert is super delicious, it won’t bog you down for the football game or swim you have planned later. It’s perfect!<\/p>\n
