Another Very Vegetarian Thanksgiving

Last Thanksgiving, I decided to make my dinner special by making it healthy, happy, and eco-friendly. Those three things can only mean one thing: vegetarian Thanksgiving recipes! Over the past year, I’ve tried to make more and more of my holiday meals be “very vegetarian,” and they always turn out delicious. So, with the help of my favorite cooking website, Smitten Kitchen, I want to share with you my recipe for this year’s turkey-friendly vegetarian Thanksgiving.

Sweet Potatoes with Pecans and Goat Cheese

These appetizers look heavenly. A vegetarian Thanksgiving has to have sweet potatoes involved. This is a good way to do so. Just make sure to make a lot: these vegetarian Thanksgiving bites are sure to go fast!

Roasted Stuffed Onions

Vegetarian Thanksgiving doesn’t mean you have to give up your stuffing! Get your stuffing fix with these delicious stuffed onions. Just leave out the bacon and substitute the turkey stock with a vegetable broth or Imagine Organic Non-Chicken Broth.

Vegetarian Thanksgiving is all about eating so much that you get into a food coma afterwards. This dish will fill you up and warm your stomach. Vegetarian Thanksgiving might just be followed up by vegetarian Thanksgiving naptime.

Vegetarian Thanksgiving means lots of veggies! Lots of colorful veggies if you make this dish! I love that this vegetarian Thanksgiving dish looks as good as it tastes.

Vegetarian Thanksgiving needs to end with a fabulous dessert! This one looks divine. No need for cranberry sauce, just whip up this fall-tasting dessert. Hope you save room for this one!
