The sun is starting to shine, the beaches are getting crowded, and the BBQs are getting used. It’s the start of summer and recipes, especially summer vegetarian recipes, are starting to change. More fruits are growing, vegetables are more accessible, and farmers markets are staying open longer! The first thing that comes to my mind when I think of summer vegetarian recipes is cold drinks! I love fresh fruit and I love lemonade, so watermelon lemonade is a must for my list of summer vegetarian recipes. Plus, it’s really easy to make! ¼ cup lemon juice, ½ cup watermelon puree, some sugar and water, blend together and you’ve got an amazing cold drink. I love this summer vegetarian recipe when my dad is using his green BBQ!
